A collaboration with Yarra Valley-based Madeleine Butter, Gippsland jersey cream is malaxared and finished with an invasive species of wakame - hunted by the team at Southern Seagreens - and a brined kelp sea salt. Pure umami, neatly wrapped in brown and blue. Brilliant with oven baked and pan-fried white fish. Or just on a slice of bread.
